wish we could've spoke more it sounds like you have a real love for cooking, alot of people don't realize you have to enjoy it to be good at it. Myself I was in the Navy as a cook for 20 years and have managed several restaurants, and I get more enjoyment out of cooking for family.
There are several things I have learned over the years they are simple to remember
put less liquid in your sauces and gravies you can always add more it is to thick or thin you can't take away. Recipes are basically a guide add your own personal touches and make it better.
Baking is a science you put to much or to little of a item you can mess it up big-time ie: yeast in bread
lastly professional chefs are usually prima donnas, cooks are more down to earth.
